Sam Peña

Director of Sanitation

Sam is Director of Sanitation at Harrigan Sanitation Solutions, where he brings more than 25 years of experience in food manufacturing with a specialized focus on food safety, sanitation systems, and regulatory compliance.

Sam also leads Harrigan’s SQF Program Support offering, designed for food manufacturers who are not ready for full outsourced sanitation—or who need additional technical expertise to strengthen their food safety programs. Through this service, Sam provides fractional, on-demand SQF support that helps plants improve documentation, enhance audit readiness, and close gaps that impact performance, cost, and compliance.

Under Sam’s leadership, SQF Program Support delivers practical, real-world guidance through services such as SQF consulting, internal audits and gap assessments, audit preparation and support, program development, on-site assessments with improvement plans, and seasonal or peak production support. This flexible model is particularly valuable for small and mid-sized processors seeking experienced SQF leadership without the cost of a full-time practitioner.

Sam holds a bachelor’s degree in business and a master’s degree in psychology, along with leadership certifications and Six Sigma training. His career includes senior sanitation and production roles at Mission Foods, Fresh & Easy, Kraft Heinz, Cacique Foods, Campbell Soup Company, and Bolthouse Farms. This operational background allows him to connect SQF requirements with day-to-day plant realities—reducing rework, improving pre-operational results, tightening chemical usage, and strengthening sanitation effectiveness.
